Reindeer Scat ~ delicious no-bake dessert morsels!

Reindeer Scat dough

Sometimes you just feel like having fun, right? That is why i came up with the idea of Reindeer Scat. These delicious little brown gems are on the healthy side, so don’t expect them to be overly sweet. My recipe is fairly simple, and I do not always measure when I make them, but i’ve included some measurements here, as a starting point. Feel free to embellish.

Ingredients

Reindeer scat rolled in cinnamon and crushed cacao nibs

  • 1/2 C Organic Crunchy Peanut Butter ~ you can always substitute another nut or seed butter!

  • 1 T Powdered Ceylon Cinnamon + 1 T Ceylon Cinnamon set aside for later

  • 2 T Organic Cacao powder (no, not the sweetened kind)

  • 1-2 T Cacao nibs

  • 1/3 C currants

  • 3-4 Chopped dates

  • 1/2 tsp vanilla

  • 1 tsp course salt

  • optional tsp of clove or cardamon powder.

Instructions

  • Hand mix all the ingredients in a bowl until fairly dry but well blended.

  • Roll pinches into 1/2 inch balls or so, rolling each ball in cinnamon to coat.

  • Set in a nice container and keep in the fridge until you are ready to serve them.

Notes: This recipe makes about 25 balls of scat total. If they are too dry, add more peanut butter, if they are too moist, add more of the powdered ingredients of your choice. I imaging Reindeer Scat to be rather full of particles of undigested bits. This recipe may come as close as we can get to the real stuff!
